Rolled Molasses Wafers

Ingredients:
- ½ cup Fancy Molasses
- ¼ cup shortening
- ¼ cup sugar
- ½ tsp salt
- ½ cup sifted pastry flour
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 egg, well beaten
Directions:
Prep time: Total time:
- Heat molasses to boiling point, then add shortening, sugar and salt. Sift together flour and spices and add alternately with beaten egg to molasses mixture. Drop by teaspoon on a well-greased cookie sheet.
- Bake at 300°F for about 10 minutes. Cool 1 minute and curl around a greased wooden spoon handle. Cookies may be filled with Molasses Butter Frosting. (If cookies become too crisp to roll, heat a few minutes in oven.)
- For best results on this recipe, use Fancy Molasses. "Lite" molasses is not recommended.
